1 cup chopped onions
1 cup green peppers (chopped)
1 cup chopped celery
2 cloves garlic, minced
1/4 lb margarine
1 can cream of mushroom soup
1 can cheddar cheese soup
1 jar pimento & juice (small jar)
3 cups cooked shrimp or crawfish
2 cups cooled rice
1/4 cup Italian bread crumbs
1/3 cup chopped parsley
1 cup chopped green onions
2 tbs hot sauce
1 tsp black pepper
1 tsp salt
Saute onion, pepper, garlic & celery in margarine until tender. Add soups, parsley, green onions, shrimp (or crawfish) and chopped pimento. Heat thoroughly. Stir in rice and bread crumbs. Turn into a three quart casserole that has been sprayed with Pam. Sprinkle with bread crumbs. Bake 350F for 35 minutes.
