1 Graham Cracker ready-crust pie crust
One 12 oz. Container non-dairy whipped topping
Divide topping into thirds and place in three small bowls. To make the first or bottom layer, add to the topping:
1/2 tsp. green food coloring
1/2 tsp. mint extract
1/4 cup finely chopped pecans

Pour into pie crust and smooth top. To make the second or middle layer, add to the topping:
1/2 cup tsp. vanilla extract

Carefully place over the mint layer in the pie crust, smooth off top of layer carefully. To make the third or top layer, add to the topping:
1/2 tsp. red food coloring
1/2 tsp. almond extract
1/2 cup chopped maraschino cherries (reserve 3 tsp. for garnish)

Carefully add to the other layers the cherry layer. Pile this layer high to form peaks. Sprinkle reserve cherry bits over top. Place in freezer for at least two hours before serving. Cut and serve frozen slices.
